Michael Hanke – a creative visionary
In the idyllic village of Combremont-le-Petit in Western Switzerland, at 665 meters above sea level, Michael has realized his dream of running his own cheese dairy. With a lot of love and work, the cheese dairy, built around 1851 and in need of renovation, was brought back to life. The processes and procedures were built to his specifications, enabling him to bring forth his handcraft in the best possible way day by day. Michaels combines traditional craftsmanship with modern and efficient production processes. This results not only in high quality and consistently storable Le Gruyère AOP but also in cheese specialties such as Bleu de Combremont and Gourmino Geiss.

HISTORY
Origin of name and formation
Goat cheese is probably the oldest cheese of all and originates from the Mediterranean region. While there are hundreds of varieties throughout the world, most are soft, young, and spreadable and meant for quick consumption. In Switzerland, goat cheese is special and rare to our agriculture system. Even more special and rare is our award winning, aged, semi firm, smear ripened Gourmino Goat (Geiss) made by Gourmino master cheesemaker Michael Hanke and aged in his own cellar - an impressive and complex cheese at a modest 3-4 months age profile which earned a silver medal twice in 2020 and 2022 at the World Championship Cheese Contest.
HEALTH ASPECTS
Goat's milk was probably also the first milk that served human nutrition.
Goat cheese...
- is easy to digest: Thanks to short-chain fatty acids and a different protein composition, even people with sensitive stomachs can usually cope with it.
- contains hardly any trace amounts of lactose (similar to our semi-hard and hard cheeses made of fresh cow’s milk)
- even gourmets with lactose intolerances can enjoy it (100 g = approx. 0,1 g lactose).
- offers healthy fats: It contains almost 50 percent from (poly) unsaturated fatty acids.
