ROCKFLOWER

Mature, classy and «rüüdig guet» (incredibly good)

The unique composition of creamy taste, soft texture and the longer ripening time makes this cheese a unique treat for the senses. Made in Entlebuch and affined in the mountain. Taste profile is balanced with complex notes of cream, umami and pine nuts.

CHEESEMAKER

Silvio Schöpfer – the adventurous Entlebucher

“At 770 meters above sea level, right above the quiet hamlet of Werthenstein, our Emmentaler has been made for over 100 years with great passion in our small mountain dairy, which my father Albert took over in 2009. As a family business every family member pitches in. Besides our Emmentaler, I love developing new types of cheese. The production of these specialties allows creativity and full utilization of all the pristine mountain milk being delivered daily from the 9 surrounding dairy farmers. The production of our specialties is independent from the quantity restriction for Emmentaler. With our cheese press, various fine specialties could be produced. Such as the Fluehblüemli."

HISTORY

Origin of name and formation

A cheese inspired by nature and the legendary traditions of Central Switzerland. "Fluehblüemli / Swiss Rockflower" (Primula auricula) are yellow alpine flowers that grow and find their way under humble conditions among craggy limestone rocks. Mainly found along the Swiss Pre-Alp region – also on the slopes of Mountain Dairy Kleinstein’s “home mountain” Pilatus massif - they have delighted many hikers’ hearts. They are signs of the times and recall the legend of the "Wildmannen" who once lived here in caves. Some of them tended to chamois which are the alpine cousin of many goat species. Back then, the chamois fed on these alpine flowers and from their milk they made cheese. When the weather allowed it, the ‘Wildmannen’ went down to the valley to help the farmers with their work. In return, they were rewarded with food and cow’s milk. Thus, they were also able to process this cow's milk they into cheese. In imitation of the edgy and untamable wild people, Silvio, his father Albert and their team reproduce this cheese. Their mountain dairy Kleinstein is located in the Entlebuch, at the edge of the UNESCO Biosphere, far above the village of Werthenstein.

AFFINAGE

…in the Mountain in Reichenbach in the Kander Valley

After 4 months of aging and care in the Kleinstein mountain dairy in Central Switzerland, the cheeses arrive in Reichenbach in the Kander Valley for the Affinage in the Mountain. Our cheese warehouse is located at the foot of the Blüemlisalp, the imposing mountain massif in the Bernese Oberland. The "Fluehblümli" cheeses are matured, cared for and aged there, under perfect climatic conditions, by our cave master and his team for at least 10 months.
